  3. I”ve only begun with this sugar free, caffeine free, grain free, dairy free way of eating. Ive been living with constant pain and swelling for the last 6 years. I’m hoping it works. Any suggestions for a newbie? My Dr is saying Fibro is my diagnosis.

    • Hi Sandy! I’m so sorry to hear about your health struggles:( I’m hopeful that it will work too! :) Gosh, suggestions…it will get easier!! :) The first few days are the hardest, but after about the first 5 days, your body will start to respond (hopefully) in small ways to the changes. Use those changes as fuel to keep going! :) Find a few things that you really enjoy eating, and then keep those on hand. I find that my Carrot Dessert Pudding is something that I love eating…so is a good bowl of soup. Alcohol-Free Pure Liquid Stevia is a lifesaver for a substitute for sugar! And almond flour, though pricy, is definitely worth investing in for cookies, pancakes and muffins! Overall, try to focus on what you can eat, and try to fall in love with cooking:) You’re doing great things for your body! Way to go!

  4. Hey Caralyn ~ I am SO craving persimmon pudding (something I had way back many years ago at the annual Fall Covered Bridge Festival held in Park Co. Indiana that my family and I would attend every single year. I’ve moved away since then). After searching the Internet for recipes, I quickly found out that this pure heaven delight is loaded with all the “bad” stuff! (Oh boy). White sugar, white flour, and butter to mention a few (eesh). Knowing you love “pumpkin-y” things as much as I do (or it may seem), I was for sure that I would find a “healthier” version within your mix of awesome recipes … Well, darn, I was so disappointed to not see anything of the sort…have you ever had persimmon pudding or the like? Do you think you could ever come up with a “healthy” version? (Persimmons are loaded with health benefits). ~ Cheers and Happy New Year to you. :)

      • Hey Caralyn ~ I’m telling you, if you would’ve had this, as I mentioned, this most “heavenly delight”, ever in your life, I’m SURE you would go to the ends of the earth to find a “healthier” version (lol). It’s simple but all encompassing of Autumn, holidays, and comfort food wrapped up in one (my opinion of course). :) It’s is something that can be served either cold or warm with whipped cream (optional of course). It is out of this world when served warm as you can imagine (and yup, w/ whipped cream). Oh boy. I do know we could make a coconut whipped cream in place of the “bad” whipped cream (compliments of Amber over at The Tasty Alternative). Maple coconut whipped cream, just awesome! …and extremely easy to make. Here’s the link: It is part of her “Pumpkin Spiced Teff Pancake” recipe (oh my!).

        Back to the persimmons. Yes, once you simply google “persimmons”, you can find out what you need about them (I know you know this) and just the same, if you google “persimmon pudding”, you will find a variety of recipes. “Fuyu” seem to be the most popular variety and sweetest, not needing to be fully ripe to be sweet. The other variety, “Hachiya”, can be bitter if not fully ripe. I do believe the ones that are most available and mostly found in the grocery stores or even farmer’s markets, are the Fuyu.

        Here is a link to Victoria Boutenko’s blog/website on how she uses persimmons in green smoothies (a great idea that I have yet to try). I will this week. Victoria is the pioneer of “green smoothies” and the one who got me started on them. :)

        And this is a snippet from an Indiana website whose banner reads: Indiana, Tour. Taste. Traditions. Your Guide to Indiana’s Fall Bounty. Nothing says “southern Indiana” like persimmon pudding.

        “Persimmon pudding is a longstanding southern Indiana tradition – after all, this is the 66th Annual Persimmon Festival! The main event of the festival is always the persimmon pudding recipe contest. Last year’s winner used buttermilk, heavy cream, butter, eggs, vanilla and cinnamon. In fact, one past winner recently appeared on NBC’s Today show to bake pudding! Other highlights include candlelight tour through Springmill State Park’s historic village and the Grand Parade, one of Indiana’s largest, and a variety of musical acts.”

        So as you can imagine, this heavenly concoction is just that. Heavenly! There just HAS to be a way to create an alternative version that is just as wonderful…withOUT all the bad stuff! No pressure (lol).

        I just learned that persimmons are in season Sept.-Dec. Nov. being the peak time. So we might have missed the boat on this year (but i know they are still out ther, i keep seeing them). And, there’s always next year. :)
