Wow. The Last Day of 2012.

As I sit here reflecting, I am truly amazed at the journey this year has taken me on.

2012 was a year of sickness, and and a year of victory. I have Ulcerative Colitis. For 10 months in 2012, I was in a horrible Ulcerative Colitis flare. I had to move home from NYC for treatment.

However, none of the medications worked. After trying several different approaches, I finally said “enough’s enough” and decided to take my health into my own hands. I began the Specific Carb Diet, and I was slowly able to stop flaring, and get my health back. I became healthy enough that I could return to NYC and go after my dream.

Along the way, I started this blog, and I can honestly say that I am so grateful. Through this crazy “blogosphere” medium, I have gotten to know some amazing people and have made some great friends. There were days where the only thing that was keeping me going was the love and support shown by you guys, (and my family, of course). So, thank YOU for making 2012 a wonderful year.

I’m really looking forward to 2013. I can just feel that it is going to rock! I’ve got a new excitement for cooking and for my acting career!

It’s hard to believe that September has come and gone!

It’s been a triumphant month: moving back to NYC and reclaiming my life. During my Ulcerative Colitis flare, I learned a lot about myself, and about life. I no longer take anything — especially my health — for granted and I’m soaking up everything life has to offer. Family, Friends and Faith are my cornerstone – and I’m living everyday in the moment, grateful for life.

So I thought I’d round up a dozen of my favorite recipes from this past September.

September?! When’d you get here?! It was just my birthday!!

Ah well, how time flies:) September has some super exciting things in store…most namely,

Here we are at the end of another month! July has been good to us:) Even though our lake home had a fire, and a heat wave swept the nation, we got to celebrate Independence Day, enjoy summer’s bountiful produce, and ring in the Olympic Games! And…I got to eat FRUIT, as I graduated from the Body Ecology Diet! :)

And there’s a lot to look forward to in August! For one, it’s my birthday on the 6th:) But also, the summer is winding down, the weather cooling off a bit, and there will hopefully be a complete healing from my Ulcerative Colitis flare for me. :)

So to give one last Hurrah for the wonderful month of July, I thought I’d “round up”  a dozen of my personal favorite recipes from these past 31 days.

Here’s to you, Dad!

I have a great dad. He’s my best friend.

I love how there’s a day dedicated to showering love on the man who taught you how to ride a bike and play catch:)

But that’s not all he’s taught me. Here are the top 3 things I’ve learned from my dad:

1. The value of hard work. My dad is Mr. Problem Solver — the hardest worker. He recently retired from his job he had for over 30 years. Talk about dedication! He is loyal, dependable, and a man that gives 110%. He led by servant leadership, and empowering others.

2. Perturb to learn. That’s one of his sayings. Basically, you won’t know until you try. You’ve got to advocate for yourself.

3. What a loving marriage looks like. That may sound strange…but just hear me out. My parents have been married for 38 years. Isn’t that amazing! The way he treats and respects my mother is the most beautiful example of selfless love. I have learned through their example what a healthy, happy marriage is.

I have learned countless other lessons too — about faith, integrity, friendship, discipline, football (go Packers!), priorities, giving, and Porche Boxsters:)

So Happy Father’s Day Dad! Cheers to you!

How in the WORLD did that happen?? Last I checked, it was still April! Ah well, how time  quickly slips through our fingers.

Memorial Day Recipe Round Up!

One of my favorite holidays is Memorial Day!! First and foremost, it is so important to honor those men and women who have risked their lives so that we can enjoy freedom. And also, Memorial Day is a great time to get together with family and friends and share laughs and good food!

Every year, we have a big family reunion up in Wisconsin — ((we came up early this year)). Boating, Beer, and Bar-B-Que! That’s the name of the game up in the Northwoods! This year will be a little different for me, since I am on the Body Ecology Diet right now to heal my Candida and Ulcerative Colitis flare. This means no sugar (or foods that break down into sugar), thus starving the yeast of its food (sugar) – no sugar, dairy, fruit, grains, beans, soy, starchy veggies (like potatoes), sweet veggies (like beets), mushrooms, tomatoes, alcohol, caffeine, or vinegars. Whew!

But no worries, I’ll still have delicious eats this Memorial Day — just not Beer Boiled Brats and Baked Beans:)

So today I thought it’d be fun to “round-up” some Memorial Day Recipes! Potlucks can be intimidating when you have food allergies, or are on a special diet. So these should help!

One of the coolest things about being part of a network of “bloggers” is that you get to meet such kind, amazing people. I’ve found that each person has an inspiring, motivational story to share! It was difficult to ONLY choose five, but here it goes:

  1. Tessa from Tessa the Domestic Diva. She’s a Gluten-Free Superstar who adopted a gluten-free, dairy-free, and corn-free diet after her children were diagnosed with food allergies. What a great mom!
  2. Amber from The Tasty Alternative. After being diagnosed with Crohn’s Disease, she started blogging about her treatment journey using Diet and Holistic Healing. As a fellow IBD-er, her story gives me hope.
  3. Taralynn from Undressed Skeleton. She’s documented her journey to health! After high school, she turned her life around by adopting a healthy lifestyle: eating right, and exercising. She’s now writing a book and inspiring others to do the same!
  4. Danielle from Against All Grain. Danielle’s battle with Ulcerative Colitis has led her to adopt the Specific Carb Diet. She’s sharing recipes and hope with the IBD community. So inspiring!
  5. Alex from Spoonful of Sugar Free. Living with a sugar-sensitivity, she’s come up with delicious recipes without sugar, gluten, or dairy! Her recipes are life-savers for those with Candida, or other food sensitivities.

Finally, my random fact…..when I was 7 years old, I was on a TV show like Barney, called Dooley. I won a Regional Emmy Award for it!
